The Pantry Program

The Pantry Program is our long-term vision to bring the land directly to the table—integrating more property-grown and locally sourced ingredients into every dish we serve. Rooted in sustainability, seasonality, and connection, this initiative is designed to deepen the relationship between our guests, our food, and the land that surrounds us.

As we expand our agricultural practices—from our maple syrup and honey production to the development of on-site herb and vegetable gardens—we’re creating the foundation for a menu that is as meaningful as it is delicious. Our aim is to feature ingredients that are grown, and harvested right here, alongside products from trusted regional farmers and artisans who share our values. Though still in its early stages, The Pantry Program represents our evolving commitment to thoughtful and sustainable hospitality.

We’re growing hot peppers on-site this year to craft our own hot honey and maple-infused hot sauce—just one of many flavourful projects simmering at the vineyard in 2025.
